The answer is you can spell grey/gray either way. Gray is a color and grey is a colour. Gray is spelled G R A Y in the United States, but grey is spelled G R E Y in the UK.
I’ve often found myself dancing between the two spellings throughout my high school and collegiate days because I’ve seen it spelled either way. As far as a difference in a color swatch gray is darker than grey.
